This wine made from vines on north-westerly facing slopes is allowed to mature late into the harvest season and develops physiological ripeness slowly, under stress, in a precarious continental climate.
Saint-Véran vineyards are among the few in Burgundy with a southerly aspect, which exposes the vines to maximum sunlight and warmth, as well as winds that help to moderate their temperature and stimulate photosynthesis.
Pouilly-Fuissé is the most prestigious appellation in the Mâconnais. The grapes come from three different parcels situated in suntraps on the slopes of escarpment of Vergisson, Solutré and Fuissé and mature on 60 to 90 year old vines.
